One of the typical fascinating feature of dinning in Istanbul is dinning at rooftop overlooking the river Bosphorus. There are lots of eateries that offered this feature . With excellent food, breathtaking views, and the Bosphorus glowing beneath the evening sky, this was far more than dinner, dining experiences in Istanbul is most memorable . The setback is food must be enjoyed immediately. Fresh from the grill and piping hot, every dish was at its best. However, the strong sea breeze sweeping across the rooftop quickly drew away the heat from the food. As the dishes cooled in the evening air, their aromas softened and the flavours became noticeably less vibrant. It was a gentle reminder that while the rooftop setting was spectacular, the meal was best savoured without lingering too long between bites. When grilled meat cools down , the moisture evaporates , the dryness sets in , the dryness certainly takes away the vibrance of the meat. This the main cause i get drawn away from typical Turkish dishes like kebabs and grilled meats. I more attracted to meat than remains moist , where the conservation of the moisture in-the meat takes place rather than evaporation . So this lies the real art of culinary excellence where few chefs possess. The ability to ingress sufficient moisture into the meat allowing it to evaporate ,cool down and still left sufficient moisture to make your bite feels succulent .
